The tasting menu is our clearest statement of what this kitchen believes: marron, saltbush lamb, quandong and Margaret River wine, arranged as one argument from first oyster to last petit four.
One menu, rewritten each season
The journey opens cold and saline with an Albany rock oyster, moves through the marron course that regulars book around, and closes with a wattleseed custard the pastry team spent a year getting right.
Every course arrives narrated by the floor team, and the sommelier writes the wine flight to match each table. Vegetarian, vegan and allergy menus run in parallel, written fresh rather than adapted, so nobody at the table eats a lesser version.

The marron course
Western Australian marron poached, finished over binchotan and served with butter made from its own shells.
