The chef's table sits inside the kitchen itself. You watch the brigade work two metres from your glass while the chef plates, explains and occasionally hands you something that never reaches the dining room.
Ten courses, served Thursday and Friday only, with the pairing included in the price. Slots release on the first of each month for the following month and typically fill within days.

The cellar first
The night starts in the cellar with the sommelier and a glass, setting up the pairings ahead.
Ten at the pass
Courses arrive across three hours, each explained by the chef between her own orders.
The quiet finish
Dessert and digestifs move to the lounge, with the option of salon access for the rest of the night.
