Every restaurant is really its roster. Ours runs twenty-two chefs, four sommeliers, two floor managers and a concierge desk, and most of them came here for reasons that have nothing to do with a casino.

Mara Ellison came home from Copenhagen because Western Australian produce beat anything she could buy in Europe. Amelia Court built the cellar because someone told her a casino restaurant couldn't hold a serious wine list.

Ines Moreau runs pastry like a watchmaker, and the youngest commis chef joined us from a fish-and-chip shop in Fremantle and now runs the grill on Fridays. The paths in are never the same.

The CVs are all different. The reason for staying is the same: this kitchen lets you do the job properly.

The people you'll meet

Mara narrates the chef's table and still works the pass every service. Amelia pours at tastings and walks the dining room Fridays. Ines runs the pastry counter where you can watch desserts plated in ninety seconds.

The floor team matters as much: our longest-serving waiter has been here eleven years and remembers the table preferences of guests who visit twice a year. That memory is infrastructure, not friendliness.

Why the turnover is low

Hospitality burns people out when it treats them as interchangeable. Our sections run fixed teams, the briefing is genuinely a conversation, and the person who plated your entrée could tell you exactly where the scallops came from.

Guests feel that without being told. The most common review phrase we get isn't about food at all; it's 'the staff clearly love working there.' That's not an accident, it's the whole operating model.
